This week, I want to tell you about a fabulous place in Prince Frederick where they serve moist, tender, flavorful Peruvian Rotisserie Chicken. Pollo Delicioso has been open since April 2018. In addition to the charcoal chicken, Robert Coulon, Barbara (his mother), Craig and the rest of the staff make fresh, from-scratch entrees, sides, sauces, and other items.
Robert has been working in restaurants since his teens. He grew up in Montgomery County, MD and spent time in Southern Maryland, where his parents had property in St. Mary’s County. His best restaurant industry experience was when he worked at Uncle Julio’s Rio Grande in Bethesda. He started as a server and ended up as a manager. After twenty years with the company, he left to operate and co-own a sports bar. However, his dream had always been to open his own restaurant.
Over the years, Robert perfected his recipes, in anticipation of having his own restaurant someday. His inspiration for a Peruvian restaurant came from both his wife Vivian (who is Peruvian) and the Rio Grande.
Robert told me the food is very important and said, “we work hard every day” to make sure what he serves is the best. He told me everything is made in-house, from scratch. And not only is the food important to Robert, but service is also too! He greets everyone who comes in with a smile and a hello. He feels customer service is an essential part of the restaurant. He was very willing to talk and offer suggestions for me to try. Barbara was nice too! When he is not there to greet diners, Craig and others are there to make everyone feel at home. You order at the counter and have the option to dine-in (there are about six tables) or carry-out.
I went for lunch and ordered several dishes from the menu. When eating at a pollo place…I must get chicken! I also got a Spicy Chicken Sub, Ceviche, Chips and Salsa, Black Beans, Brussel Sprouts, and Plantains (of course). And, as usual, I took lots of leftovers home!
Robert told me getting the chicken just right took some recipe tweaking. He first cleans and brines the chickens. Then he has a marinade/rub made with cumin, garlic, dark beer, and Burgundy wine. The chicken marinates for at least 24 hours. The chicken was so tender and juicy. The flavors from the marinade and the charcoal cooking are perfect. The Spicy Chicken Sub had chicken, peppers, onions, lettuce, tomato, and green/yellow sauce. It was so full of deliciousness! Robert called a “knife and fork” sub. The Ceviche was amazing! I’m usually not a big
Ceviche fan, but this was wonderful. It was made with fish, shrimp, scallops, tomatoes, onions, juice and cilantro. The Chips and Salsa are exactly the way I like them. The Chips were thin (but not too thin for the salsa) and the Salsa had roasted tomatoes, onions, jalapenos, and spices (to include cilantro). All the sides were delectable. The beans were vegetarian and were spiced and cooked just right. The Brussel Sprouts were sautéed in white wine, butter, and garlic. Yum! And…the plantains…so tasty! They were served with a wonderful sour cream (it had sugar and Kahlua mixed in)!
Robert is all about creating a great experience for his customers. Stop in and chat with him and you will see his excitement and passion! And then after your chat, eat some fantastic food!
Pollo Delicioso is open Monday through Saturday from 11 am to 8 pm, and Sunday from 11am to 7 pm. They are located at 155 Central Square Drive in Prince Frederick, MD.
